Kohlrabi Salad

This is a fun, kid-approved recipe utilizing a delicious but less commonly used vegetable.   Kohlrabi is a a relative of cabbage, broccoli, cauliflower, kale, collard greens, and brussels sprouts…and carries a similar nutritional powerhouse profile.  If you’re curious about all the good stuff that it has to offer, I’ve included the nutritional information below the recipe, courtesy of the USDA nutritional database.

 Ingredients:

  • 2 kohlrabis
  • 2 carrots
  • 1 apple
  • balsamic vinegar
  • honey

Steps:

1. Grate everything (easiest in a food processor but can use grater or mandolin).

2. Sprinkle with a little balsamic vinegar and honey, to taste.
